Ethiopia Guji Hambela, Dintu

The Guji region of Ethiopia has been receiving more and more attention from the specialty coffee world recently because of its exceptional coffees. Guji, a zone of the Oromo region in Ethiopia south of Sidamo, is well known for its mineral-rich volcanic soils – a perfect growing environment for Arabica coffee.

The many smallholder farmers of Guji live and grow coffee at an altitude of 2,100-2,400 meters above sea level and surprisingly compared to other regions of Ethiopia, coffee cultivation is relatively new here. This coffee is grown by 680 smallholders who live around Dintu, in the Hambela locality. 

They deliver ripe coffee cherry to the Hambela mill, where it is de-pulped the same day, then fermented underwater for 48–72 hours before being washed. Then it’s soaked for 8–16 additional hours and washed again. The coffee is then spread on raised beds and dried for about 9–12 days.

When you combine the perfect growing environment, the high altitudes, the precise treatment of the coffee at origin, and plenty of TLC here at the roastery, you’re guaranteed to get crisp, clean, fruit and floral flavours and bright acidity.

It’ll make a bright, zippy espresso or mokapot (but will need some careful dialling in) but filter, pour-over and Aeropress are where it will shine. Expect mouthwatering lemon and raspberry, floral aromas of jasmine and bergamot (or Earl Grey tea), and sweet caramel. In cafetière, the fruit will be there in abundance too, but there will be some caramel that comes to the fore. Enjoy!
