Ethiopia Konga, Yirgacheffe, fully washed
Ethiopian fully washed coffees are well-known the world over, and this is cracker of an example. It is from the same mill as Born Sippin’, so this is the same coffee, grown by the same smallholder farmers, but processed by the fully washed method (whereas Born Sippin’ is a natural process)
There is a magical combination of heirloom varietals (with centuries of local cross-pollination and the emergence of new varietals), mixed with remarkably high altitudes, expert processing, and decades of experience that exists only in Ethiopia.
It tastes of summer – peach, mango, vanilla, pineapple, lemon, mandarin… we could go on. All of these fruits, and probably some more that you could find, wrapped in a big mouthful of caramel sweetness. In terms of brewing, we’d recommend filter methods for this one. You can use it for espresso, but its going to be a juice-bomb, so dial in carefully, and in cafetière you may lose some of the fruit zing but there will masses of caramel sweetness. V60, Chemex, or filter brewing methods will allow it to really shine. Enjoy!
