Experience the soul of Mexican specialty coffee with our latest offering from Tenejapa. Nestled in the highlands of Chiapas, Southern Mexico, just a few hours from the Guatemalan border, this region is a vibrant hub of Mayan heritage and sustainable agriculture. Here, smallholder farmers prioritise harmony with the land, cultivating premium Arabica beans that reflect the unique spirit of the terrain.

While grown at a moderate altitude, this lot punches well above its weight thanks to meticulous farming and processing practices. The coffee thrives in rich volcanic soil under a canopy of native shade trees, benefiting from the diverse microclimates that define the Chiapas landscape.

Farmers and co-ops in Chiapas typically follow a rich tradition of on-farm processing, with washed coffee representing the primary method. Ripe cherries are harvested by hand, depulped, fermented for 12-17 hours and then thoroughly washed in water channels. Farmers typically dry their coffee on patios next to their homes for 12-14 days and then sell as dried parchment.
