If you’re looking for a classic, indulgent cup, you’ve just found your match. Whilst Mexico can produce some fruit forward beans this washed lot is from Chiapas which is known for producing dessert like profiles, giving our coffee a more indulgent taste with a deep caramelised sweetness to it.

In Tzeltal culture, this coffee is known as Bankilal, translating to ‘older brother’ which is a figure of leadership and protection. This coffee is the gold standard of a traditional washed Chiapas coffee, offering reliable, bold and comforting notes. 

Coffee Origin

In the highlands of Los Altos, agriculture remains a vital link to the past through the preservation of traditional polycultures. By growing coffee beneath a diverse canopy of native trees, farmers build natural resilience and protect local biodiversity while providing essential environmental services. This commitment to the land is best exemplified by the milpa, an ancestral system where maize, beans, quelites, and squash coexist harmoniously. As the cornerstone of local life, this intercropping system ensures both food sovereignty and a nutrient-rich, diversified diet for the farming communities.

We believe that preserving tradition requires a sustainable income, which is why we source from producers who ensure their allied farmers receive significantly higher returns for their craftsmanship. During the 2025 harvest, our partners paid these farmers up to 38% above local market prices. By supporting this transparent supply chain, we are directly investing in the future of these families and the remarkable coffee they cultivate.
