Ethiopian fully washed coffees are well-known the world over, and this is cracker of an example of the fruit-forward nature that some lots. The magical combination of heirloom varietals (with centuries of local cross-pollination and the emergence of new varietals), mixed with remarkably high altitudes, expert processing, decades of experience, and then that intangible special something that only seems to exist in Ethiopia… you can understand why we love them.
This lot from the Chire mill is supplied by about 700 smallholder farmers. These are back-garden growers who will have a couple of hundred trees each, so they join together to supply local processing mills. Chire, which is managed by Mr Assefa Dukale, is one such mill, and is situated on the edge of the village of Chire, not far from the border with the region of Yirgacheffe. The farmers grow coffee at 1,920 to 2,090 metres, and then the mill processes the coffee using the fully washed method.
It tastes of summer – peach, mango, vanilla, pineapple, lemon, mandarin… we could go on. All of these fruits, and probably some more that you could find, wrapped in a big mouthful of caramel sweetness. In terms of brewing, we’d recommend filter methods for this one. You can use it for espresso, but its going to be a juice-bomb, so be warned, and in cafetière you may lose some of the fruit zing. V60, Chemex, or filter brewing methods will allow it to shine.
