This is the third of three lots we have from Finca Patio Bonito this year, and this one is a traditional fully washed process.
Carlos’s farm is called Finca Patio Bonito (“pretty courtyard”), and he’s been farming for 40 years, along with his wife Maria Angela, who is also a schoolteacher. Five years ago, he started working with Banexport, and the partnership has dramatically improved the prices he sells his coffee for, the increase in production they’ve helped him with, the learning they’ve done together, and the improvements on the infrastructure and processing equipment on the farm. This is a perfect example of why working with good exporters, good traders, and (hopefully) good roasters can make a long-term difference to farmers.
This coffee is comprised of Castillo and Colombia varietals, and it is processed using a classic Colombian fully washed method, including drying in a parabolic dryer.
Señor Carlos is a top producer, and the quality of the processing shines through in this coffee, even though the Castillo & Colombia varietals may not be as glamorous as the Pink Bourbon lot we also have. There’s a stunning balance between fruit, acidity and sweetness, which is everything we want from Colombians. There’s some beautiful candied apple sweetness, and plenty of caramels and toffee, but also a juicy blackberry and bright orange ‘zestiness’ too. This wonderful balance means it’ll work however you want to brew it, and it’s wonderfully forgiving too, so small mistakes won’t be a big deal!
This is the second year of roasting Señor Carlos’s coffees, and if you haven’t checked out his other coffees then you really should, as they won’t be around for long!
