Compared to the patio-processed Jacutinga, this is fruitier, a little spicier, and more complex. There’s plenty of chocolate, but it’s dark chocolate instead of milk, and there’s an elegant red grape fruitiness, as well as a gentle warming liquorice flavour going on.

Finca Serbia, El Congo, Santa Ana
This is a new coffee for us, but it comes for a family with serious farming experience, who are well-known in the specialty coffee world. The Lima’s have been farming coffee in El Salvador since the 1930’s, and this farm, Finca Serbia has been in their care and ownership since it was first planted.
The whole farm is planted with shade trees – oaks, cedars and balsams, which means the coffee gets an awesome growing environment, shielded from the UV rays of what can be intense summer sunshine. Whilst this farm is only 1,000m above sea level, we shouldn’t judge a book by its cover, and the quality of the picking and the processing means there is plenty going on in the cup.
In espresso, stovetop and aeropress, this is a cracker – expect a lovely balance between chocolate and honeycomb sweetness, and jammy fruit. It’s works well as a filter, cafetière or pourover too, but espresso is the one for us.
It’s simple, forgiving, great for all-day drinking, and just delicious. Enjoy!
